Meatballs with spicy Tomato sauce

Serves 4

  • 1 Packet of Gilchesters meatballs
  • 1 medium onion, finely chopped
  • 1 red chilli, chopped without the seeds - optional
  • 1 Teaspoon Tabasco sauce - optional
  • 1 tablespoon olive oil
  • Freshly grinded salt and pepper
  • 2 tbsp. chopped parsley or basil

Heat the oil in a large frying pan and, over a medium to high heat, brown the meatballs on all sides for about 5 minutes. Reduce the heat and add the onion. Soften the onion, then add the tin of tomatoes. Add the chillies, season and simmer gently for 10 min. until the meatballs are cooked through. Garnish with the chopped parsley or basil).

I prefer to make my tomato sauce separately and put the cooked meatballs in at the last minute.

If you are in a rush you can always use a good quality, ready made organic tomato sauce.

Serve with pasta, mashed potatoes, rice, crusty bread.
